Zucchini kootu

How to Cook Zucchini Kootu

1/2 cup toor dal

3 tbsp Coconut oil

6  Curry leaves

1tps mustard seeds

1/2 turmeric powder

2 tsp urad dal

1/4 Chopped onions

3 Green chilli pepper chopped

2 1/2 peeled and cubes zucchini

2 tsp chopped ginger

1 tsp Cumin powder

2 tbsp Coconut powder or milk

Salt to taste
 

 

method:

 

   1. Bring 4 cups of water to a boil water . And toor dal and 1/4 tsp turmeric powder.

      Reduce  heat to medium high.Cook, uncovered,for about 30 minutes until dal becomes

      creamy.

 

   2. Heat coconut oil in a saucepan and  put oil in it.then add  mustard seeds to pop and add

      the curry leaves

 

   3. Add urad dal till turns in to golden color

 

   4. Add onion.chilli pepper, and remaining  turmeric powder

 

   5. Add zucchini and ginger. Blend well with onions and green chilli pepper

 

   6. Add creamy toor dal ,cumin powder, and salt .Add 3/4 cup of warm water to the dal.

      Stir zucchini well seasoning for 4-5 minutes

 

   7. Cover and simmer until zucchini is tender  then add coconut powder. Stir and cook for an

      additional minute.
