Ingredients
10 medium size Yam 1/2 cup Toor dal 1 medium size Onion 10 flakes Garlic 10 Green chillies a lemon size Tamarind ½ teaspoon Fennel seeds ½ teaspoon Mustard seeds Green Curry Leaves 1 bunch pinch Salt as required 4 tablespoons Oil
Cooking Instructions Wash the yams well in water so that all the mud is washed away. Pressure cooks the yams for 4 whistles .Cook toor dal in a separate pan. After it cools down peel off the skin and mash them up well and keep it aside. Soak the tamarind in water and keep it aside. After some time make it into a thick paste and strain it. Add 1/4 cup of water to it. Chop the onions and slit the chillies. Cut garlic into small pieces. Heat the oil in a pan and add mustard seeds, fennel seeds and curry leaves. When they splutter add onion, garlic and chillies and sauté it well. When they get fried up add the mashed yam, dal and turn over well with a spatula. Add turmeric powder and salt and turn it well. Now pour the tamarind paste and stir well. Keep on stirring for 20 minutes in a medium flame until the yam starts getting as thick gravy. Serve it with rice. By: V Ranjana Krishnan
