1 bunch spring onion, roughly chopped
1 tbsp lemon juice
1 tbsp olive oil
¼ tsp salt
¼ tsp freshly ground black pepper
1 tbsp freshly chopped coriander leaves
30g/1 oz roasted salted peanuts, crushed
Peel the cucumber and chop it finely. Chop the tomatoes finely, then place the cucumber, tomatoes and spring onions into a serving bowl.
Combine the lemon juice, olive oil, salt, pepper and coriander leaves and set to one side. Combine all the ingredients just before serving.
