Tasty Chicken Baskets
Makes 40 – 50 baskets
Baskets (directions follow)
2 cups chopped cooked chicken meat
5 slices bacon, fried and crumbled
3 tablespoons diced, pared apple
½ teaspoon salt
1/8 teaspoon pepper
¼ cup mayonnaise
¼ cup finely chopped pecans
4 ounce can mushrooms, chopped
Combine and mix all filling ingredients. Cover and refrigerate for 2 hours. Makes 2 ½ cups filling, enough for 40 -50 baskets.
To make Baskets:
Cut 90 – 100 rounds from regular sliced bread using a 1 ½ inch round cookie cutter. Sp[read half the rounds with softened butter.
Cut a small hole from the centers of remaining bread rounds, “doughnut” fashion. Place each doughnut atop a buttered round, and fill center with chicken filling, mounding high. Garnish with springs of parsley.
