Tapioca PayasamTapioca Payasam


1/4 cup raw cashew halves

1 tbsp butter

1/2 cup tapioca

3 cup milk

Pinch of kesari powder

1/4 tsp cardamom powder

6-7 threads safforn

2 very small crystalline campbor (oprional)

1/2 cup sugar

1/4 cup raisins (optional)



1 .  Fry cashew halves in 1/2 tbsp  butter in a small skillet or butter warmer over medium heat until evenly

cooked.  Remove cashews from skillet and set aside


2  . Melt another 1/2 tbsp butter in a tall saucepan. Add tapioca and cook  for a few minutes in a butter,

stirring constantly


3  . Add milk slowly in 1 cup increments, stirring all the while,over medium  to low heat,until tapioca

cooks .  When tapioca is cooked it will increase in size and  will become softer

(approximately 15 minutes)


4  . Add kesari powder,cardamom, safforn threads, crystalline camphor, and sugar, stir well over low heat
5  . Add cashew halves and raisins, if desired
