2 tbsp tamarind pulp without seeds

4 tbsp dates

1 tsp brown sugar

3 tsp roasted ground cumin

1/2 tsp red chili powder

Salt to taste

 

Method:

 

1. place the tamarind pulp ,dates and brown sugar with 1 1/2 cup water in a pan and bring to a boil .

Cook for 25 -30 minutes, stirring occasionally. Remove from the heat and allow to cool

 

2. Place in a food processor or blender and blend to a smooth consistency. Pass through a sieve

 

3. Add the roasted cumin and red chili powder and salt. Taste  and adjust the seasoning. Store in an

airtight container in the refrigerator for up to two weeks
