Sweet Green Mango Chutney

1 green unripe mango

3/4 cup sugar

3 tbsp minced garlic

3 tbsp minced ginger

3/4 tsp cayenne

3 tbsp white vinegar


1. Peel the mango and slice the flesh off pit and coarsely chop it. Process in a food processer until

minced but not pulverized. Place the mango in a boil and mix in the sugar. Cover with plastic wrap

and set aside for at least 18 hours at room temperature


2. In a wide nonstick pan combine the mango with the ginger, garlic, cayenne, and vinegar. Heat the

mixture over medium -high heat until it is very thick and turns butterscotch color about 10 minutes.

Remove from the heat and set aside to cool.
