Sweet Cresp with CoconutSweet Crepes with Coconut

1 cup all purpose flour

1/4 tsp baking powder

3 tbsp sugar

3/4 milk

1 large egg ,lightly beaten

2 tbsp butter,melt

1 cup sweetened shredded coconut

1/4 tsp ground cardamom

 

Method:

1. In a bowl combine the dry ingredients  and add the milk, egg, melted butter , and 3/4 cup

water. Whisk until combine and no lumps remaining . The mixture should coat the spoon and

have the consistency of the thin pancake batter

 

2. Combine the coconut and cardamom in a bowl, set aside

 

3. Heat frying pan over medium heat.When the pan is hot ,stir the batter and ladle a scant 1/4 cup

to the pan .Immediately lift the pan and tilt it in a circular  direction to spread the batter into a thin

even circle like a crepe. Cook until underside is lightly browned.Remove the pancake to clean  surface,

place 1 tbsp coconut mixture down the center of circle.roll it into a cylinder and place it in a small

baking dish.

 

4. After all done cover the baking dish with foil and bake for 10 minutes, on 325 degrees.Remove and

serve warm
