Spicy Fried Tomatoes

1 1/2 tsp ground cumin

1/2 tsp crushed black pepper

1/4 tsp turmeric

1/4 tsp cayenne

1/2 tsp sugar

2 tsp salt

6 tbsp vegetable oil

20 fresh curry leaves

2 cups sliced onions

1 1/2 tsp minced garlic

4 large tomatoes ,sliced into 1/2 inch -thick cross sections

 

Method:

 

   1.  combine the cumin ,peppercorns, crushed mustard seeds, turmeric, cayenne ,sugar and salt.

       Divided into three equal portions and set aside.

 

   2.  In a frying pan heat the oil over medium-high heat. Toss in, 7 of curry leaves, 2/3 cup onions and

       fry until get light brown. Add 1/2 tsp garlic , and add one of the spice portions and fry. Stirring

       constantly  for a minute

 

   3. Push the onions to the edge of the pan , add slice of the tomato slices making a single layer on the

       pan. Fry over medium-high heat until lightly browned,about 2 minutes. Turn over carefully then

       spread  the onions over the tomatoes, When the second side is browned, slide the tomatoes and

       onion onto a platter and cover.Wipe the pan and repeat with rest of things twice.. Serve warm.
