Shrimp Soup Serves 6
½ cup coarsely chopped tomatoes ¼ cup tomato sauce ¼ teaspoon black pepper and cumin powder ½ teaspoon rasam powder ¼ teaspoon salt (more, if desired) 3 tablespoons chopped green onion tops, plus additional for garnish 3 tablespoons chopped coriander, plus additional for garnish ¼ teaspoon minced fresh ginger root 1 clove garlic, crushed ½ pound fresh raw shrimp (shelled and cleaned), cut in half
Boil 6 cups of water. Add tomato and cook, uncovered, until tender. Add tomato sauce, cumin and black pepper powder, rasam powder, and salt. Stir well and let it simmer over medium-low heat.
Add green onion tops, coriander, ginger, and garlic. Let it cook over medium heat for 2 to 3 minutes.
When the mixture beings to boil, add shrimp. Let shrimp cook over medium heat until they turn pink (2 to 3 minutes)
Garnishing with additional chopped green onion tops and chopped coriander.
