Spice Onion Baji

(Fritters, makes 24)

 

1 cup chickpea flour

1 tsp ground cumin

¼ tsp ground turmeric

¼ tsp cayenne

1 tsp sea salt

2 tbsp lemon juice

1 tsp finely chopped garlic

1 tbsp fresh ginger, finely chopped

A littler water

3 cups hand thinly sliced onion

Oil for frying

 

In a bowl, combine the chickpea flour, cumin, turmeric,cayenne and salt, stirring well to blend.  Add the lemon juice, garlic and ginger..  Gradually stir in the water to make a thick, firm batter. 

 

Add the onion and stir well.  Place the oil in a wok.  Heat over medium-high heat, as like for french fries.

 First frying 

Use two tablespoon.  Take one spoonful of the mixture and hold it over the wok.  Use the other spoon to gently scrape the dough from the spoon and drop it into the hot oil.  Fry until the baji start to turn golden.  Remove from the oil and drain on paper towels.  Set aside. 

 

Repeat the operation, taking care not to put too many baji in the wok at the same time. 

 Second frying 

Cook all the baji in the oil a second time, in small amounts, until they are lightly browned.  Remove from the oil and drain on paper towels.  Serve hot with coriander chutney.
