| Spiced Mixed Nuts |

Ingredients 120g/4oz whole almonds 120g/4 oz raw cashews 2 tsps cooking oil ½ tsp ground coriander ½ tsp ground cumin ¼ tsp chilli powder ½ tsp salt Cook the nuts for 3-4 minutes in a heavy based frying pan over a low heat until the nuts are just heated through. Add 1 tsp oil, stir and mix thoroughly. Toast the unuts until they are evenly browned, stirring constantly. This may take up to 10 minutes. Remove from the heat and sprinkle with the spices and salt immediately. Mix thoroughy, then leave for 10 minutes. Add the remaining oil, stir and mix until the nuts are fully coated by the spices. Allow to cool completely before serving.
