| Crayfish Curry |

500g Crayfish (meat and tails) 11g onion 4 tblsp oil 1 tsp methi seeds (soak in hot water) 1 tsp whole mustard 1 tsp pounded garlic 1 tsp chilli ½ tsp turmeric 1 tsp dhunia/jeera 1 tblsp lemon juice (or tamarind puree) 1 tsp salt 2 tomatoes (liquidized) Braise onion and methi seeds in oil and when they begin to change colour add all spices, braise for two minutes. Add tomato and crayfish, braise for a few minutes and finally add lemon juice.
