Savory Sunday How to Make Savory Sunday Chicken

4 tbsp coconut oil

3 lb chicken pieces with skinned

2 cup finely chopped onions

2 large potatoes cut into 1 inch cubes

1/2 tsp turmeric

2 tbsp ginger paste

1 1/2 tbsp ginger paste

4 green chili cut to small pieces

3 tsp ground roasted cumin

3 tsp ground roasted coriander

1 1/4 cup water

3 tbsp tomato paste

5 tbsp plain yogurt

1 tsp garam masala

salt to taste

1 small onion slices

cucumber slices

 

Method:

1. Heat 2 tbsp oil in a skillet over medium heat. Fry chicken piece in 2 batches turning frequently until

opaque  and lightly browned 4-5 minutes per batches. Remove spoon and set aside.

 

2. Add 1 tbsp oil to the skillet and reheat over medium low heat. Fry potatoes until they medium brown ,

6 to 8 minutes turning frequently and remove and set aside.

 

3. Add 2 1/2 tbsp oil to the skillet and heat over medium low heat. Add onion and fry until richly browned

1-20 minutes.Stir turmeric. Add ginger, garlic, green chili ,cumin and coriander and fry for a few

seconds.  Add water. Blend in tomato paste and add chicken and any accumulated juices. Simmer ,

covered ,1 minutes. Add the potato and cover until both chicken and potatoes are tender another

15-20 minutes.

 

4. Remove from the heat. Remove half of the chicken and potatoes ,add salt,yogurt, ,and garam masala

to the skillet and mix gently. Return chicken and potatoes to the skillet and mix well with the sauce.

Let stand covered for few minutes to allow the flavors to develop. Garnish with onion slices,cucumber

and cilantro and serve
