1 cup mealie meal

1 cup flour

½ tsp0 salt

1 tablespoons ghee

 

Moisten mealie meal with boiling water, stirring well to avoid lumps (just sufficient water to really coat meal well).  When slightly cool add ghee and salt.  Mix well then add the flour and knead to fairly stiff dough. (If necessary add a little cold water but normally the moisture from wet mealie meal takes care of the additional flour)  Divide into two portions and roll each between palms of hands till no fine cracks are visible.  Roll out to 6 mm thickness and put on hot griddle.  Turn over when underside is light brown, then brown on other side.  Pour about a tablespoon of ghee on either side and freckle slightly more (optional).
