Roasted Mung Beans Stew

How to Make Fragrant Roasted Mung Beans Stew

 

1 cup yellow mung beans

5 cups water

1/2 tsp turmeric

3 green chili cut into small pieces

salt to taste

1 1/2 tsp ground cumin

2 tsp ground coriander

2 tbsp coconut oil

2 bay leaf

3 tbsp minced ginger

1/4 garam masala

2 tbsp lime juice

12 curry leaves

 

Method:

 

1. roasted the mung beans

 

 

2. Bring water to boil in a pan. Stir in the roasted beans ,turmeric and green chili . Simmer ,covered until

    the beans are very tender 40- 4 minutes. occasionally stir  and add salt, cumin, coriander  and keep on

    warm.

 

3. Heat oil in a skillet over medium low heat. Add bat leaf,curry leaves fry for a seconds, Add ginger  and

   fry until light browned about 1-2 minutes.  pour contents of skillet over the beans mixture and mix well .

   Simmer about 3 minutes , then remove from the heat. Blend in garam masala .lime or lemon juice 

   cover and let stand for a few minutes to help the develop the  flavors. Serve hot
