Roasted Eggplant

How to Make Rich Roasted Eggplant


2 medium eggplant

3 tbsp coconut oil

1/4 tsp kalonji seeds

2 whole green chili

1 cup finely chopped onion

1 tbsp fresh minced ginger

2 tsp chopped green chili.seeded

1/2 tsp turmeric

1/2 tsp salt

1/2 cup chopped tomatoes

2 tbsp finely chopped cilantro

3 tbsp chopped green onions



1. Smoke or roast the eggplant and set aside


2. Heat oil in a skillet over medium  low heat. Fry kalonji seeds and green chili about 

   few second and add onion and fry until it is richly browned about 5-6 minutes. Add

   garlic and ginger and stir several times. Add chopped green chili,turmeric,salt and tomatoes.

   Simmer ,covered, until tomatoes disintegrate into a sauce,about 10 minutes. Discard whole

   green chili


3. Add the eggplant and simmer ,covered about 10 minutes to blend flavors.Remove from heat

    and let stand covered for 10- 15 minutes to develop the flavors. Add cilantro and mix well.

   Garnish with green onions and serve
