Orange Rice Recipe 2 cups rice 3 tblsp ghee ½ cup cashew nuts 2 eggs (hard boiled) Few elachi, cloves and tuj (Cardamom pods, whole cloves and cinnamon) 2 oranges 1 tblsp seedless raisins 2 onions Salt to taste Extract juice of oranges. Cut the peel of ½ an orange into thin match-stick sized strips. Slice onions and fry in ghee and just as it starts to get a golden colour, add nuts, raisins and orange rind. Stir for a minute. Add spices, orange juice, the washed rice and slat. Add up to 3 cups of water and cook slowly till all moisture has evaporated. Garnish with a few strips of orange peel.
