Regal Indian CeeseHow to Make Regal Indian Cheese

 

3 tbsp vegetable oil

1/2 tsp cumin seeds

2 Black cardamoms seeds

1 medium onion, finely chopped

2 Garlic  cloves crushed

1tsp peeled and grated ginger

2green chili, finely chopped

2 plum tomatoes,blended until smooth

2 tbsp plain yoghurt whipped until thick

1tsp corn starch

1 tbsp tomato puree

1 tbs  sugar

1/2 tsp salt

2 tbsp heavy cream

Handful of cilantro ,chopped

pinch of garam masala

pinch of medium -hot chili powder

9 oz paneer ,cut into 1-inch cubes

Method:

 

*  Heat the oil in a heavy based pan, stir in the cumin and black cardamoms, fry 4 minutes.

 

* Add onions ,garlic,ginger ,and green chili ,fry about 4 minutes until onions are golden brown

 

* Tip in the tomatoes and cook about 5 minutes until sauce is as thick heavy cream

Gradually fold in the yogurt and off the heat

 

* Mix the cornstarch and 2 tbsp water to a smooth paste and stir into the onions mixture

 

* Return the pan to the heat and add tomatoes puree, sugar ,and 4 tbsp water and stir

 

* Tip in the salt, garam masala, and chili powder. Stir in the paneer and cook on a low heat for 2 minutes.

 

* Swirl in the cream and cook for a minute and garnish with the cilantro
