How to Make Potatoes Braised in Rich Tart Sauce


4 tbsp mustard  oil

1 lb peeled potatoes,cut into 1 inch cubes

3 whole dried red chili

1/2 tsp asafetida powder

3 tbsp fresh minced ginger

2 tsp chopped green chili

1 tsp ground cumin

1/2 tsp ground red chili

salt to taste

1/2 cup water

1 tsp tamarind concentrate




1.  Heat 2 tbsp oil in a skillet over medium heat and fry potatoes until they turn medium brown

    about 5-6 minutes,turning often. Remove onto the plate  and set aside.


2.  Add rest of oil to the skillet and heat over medium low heat. Fry red chili until they darken.

    Sprinkle asafetida onto the chili adn add ginger,green chili, cumin,red pepper ,salt and stir a

    few times .Stir potatoes ,add water and simmer,covered,until potatoes are tender but still hold

    their shape 10-15 minutes


3.  Add tamarind and stir gently to mix in with the potatoes. Remove from heat. Let stand covered

     for more 10 minutes to help develop the flavors. Garnish with cilantro and serve
