Pork with vinegar and garlic

Pork  with vinegar How to make PorkĀ  in vinegar and garlic

1/2 Lb pork,cut into bite size

2 tbsp vinegar

Salt to taste

2 tbsp oil

4 cloves garlic, crushed

259 g onions,sliced

125 g tomatoes, chopped

4 green chilies,slit lengthways

1/2 tbsp sugar

FOR THE SPICE PASTE

6 dried red chilies

2 tsp bright red paprika powder

1/2 tsp cumin seeds

2 small cinnamon stick

10 cloves garlic

4 cm fresh ginger, chopped

Method :

1. Place the cubed meat in a large bowl, cover with half the vinegar and some salt and place in the

refrigerator for 2 hour

 

2. Place all the spice paste ingredients and the remaining vinegar in a food processor or blender and

grind to a fine paste. Rub half of the paste over the meat and marinate in the refrigerator for a

further 8-10 hours.

 

3. Heat the oil in a large,heavy bottomed pan and add the crushed garlic. When it begins to

change colour add the sliced onions and cook until they are golden brown. Add the chopped

tomatoes, the remaining spice paste, green chili and sugar. Cook over a medium heat for

10-15 minutes.

 

4. Add the marinated meat and about 250 ml water and cook over a medium heat for 20-25 minutes.

Add salt to taste. After about 5-10 minutes check if the meat is tender and cooked. The sauce should

have the consistencey of thick.
