How to Make Tender Garden Peas and Potatoes
4 tbsp coconut oil
1 1/2 peeled potatoes cut into 1-inch cubes
2 bay leaf
4 whole cardamom pods
2 whole cloves
1/2 tsp turmeric
1 1/2 tsp ground cumin
2 tsp ground coriander
1/2 cup chopped tomatoes
1/2 tsp salt
1/2 cup water
1/2 cup fresh or thawed frozen peas
3 tbsp plain yogurt lightly beaten until smooth
1/2 tsp garam masala
1. Heat 2 tbsp oil in a large skillet over medium heat. Fry potatoes until they turn medium brown,
about 5 minutes,turning often .Remove from the heat and set aside
2. Add rest of oil to the skillet and heat over medium high heat. Fry bay leaf,cardamom,and cloves
for 5 seconds. Add turmeric ,cumin,coriander and stir several times. Stir in the potatoes,and salt.
Add water and lower the high heat slightly.
3. Simmer,covered until potatoes are tender,15 to 20 minutes. Stir occasionally to prevent sticking.
Add fresh peas half way through cooking time,frozen peas 4 minutes before end of cooking. Remove
from heat. Gently blend in yogurt and garam masala without breaking the potatoes. Let stand covered
for a few minutes to help develop flavors. Garnish with cilantro. Serve pipping hot
