¾ cup (1 ½ sticks) butter or margarine, at room temperature
¾ cup sugar
1 egg yolk
1½ cups flour
1 teaspoon baking soda
½ teaspoon salt
½ cup rolled oats
½ cup small crunchy nugget cereal
With an electric mixer, cream the butter or margarine and sugar together until light and fluffy. Mix in the egg yolk. Sift over the flour, baking soda, and salt, then stir into the butter mixture. Add the oats and cereal and stir to blend. Refrigerate for at least 20 minutes.
Preheat the oven to 375oF. Grease a cookie sheet. Roll the dough balls. Place them on the cookie sheet and flatten with the bottom of a floured glass.
Bake until golden, 10-12 minutes. With a metal spatula, transfer to a rack to cool completely. Store in an airtight container.
