Mushrooms with Spicy Tomatoes 

3 tbsp ghee

2 cups halved, thinly sliced onion

1 tsp finely chopped garlic

1 ½ cups peeled, chopped tomatoes

½ tsp ground turmeric

¼ tsp garam masala 1

¼ tsp cayenne

1 ½ tsp sea salt

4 cups cleaned, halved white mushrooms

2 tbsp chopped fresh coriander leaves


In a wok or saucepan, heat the ghee over medium heat.  Add the onion and cook until golden.  Add the garlic.  Stir and cook for a few seconds.  Add the tomatoes and cook for 5 minutes.  Add the turmeric, garam masala, cayenne and slat.  Stir.


Cook for 5 to 6 minutes, stirring.  Add the mushrooms.  Stir and cook for 15 minutes.  Remove from heat.  Garnish with fresh coriander.  Serve.
