Mung Beans with Cheese

Fresh Cheese and Mung Beans Delight

Fresh cheese

2 tbsp mung beans flour

2 tsp regular  cream of  wheat

1 1/2 tbsp coconut oil

1/2 tsp five-spice

1 tbsp minced, peeled fresh ginger

2tsp chopped green chili

1 tsp black mustard seeds, ground to powder,

1/2 cup chopped tomatoes

salt to taste

1 cup hot water


1. Prepare fresh cheese ; Combine it with mung flour and cream of wheat to form a dough. Knead for

   at least 5 minutes to make the dough smooth. Pinch off portions of dough and roll into balls about an

   inch in diameter. Flattern into croquettes .13/4 diameter. Set aside. make 12 to 14 croquettes.


2. Heat oil in a skillet over medium low heat and fry five spices until  until it starts popping. Add  ginger

   and  green chilli and stir  for a few more seconds. put black mustard paste.  Add tomatoes,salt, and

   water and bring to boil


3. Lower the heat slightly and simmer ,covered , for a minutes or so. Uncover and smash the tomatoes 

   with the back of spoon,mixing them in with the sauce. Gently add the reserved croquettes and simmer ,

   tightly covered  for 25-30 minutes, turning the croquettes  a few times  so they don’t stick to the

   bottom of the skillet.


4. If the sauce is still watery,carefully remove the croquettes  and set aside. Turn heat to medium  and

   cook the sauce uncovered about 5 minutes . When sauce is thicken  ,remove from the heat  and

   return the  croquettes to the skillet. Scatter cilantro on top. Serve immediately
