Masala King Prawns

 

 

750 g uncooked king prawns

2 teaspoons grated fresh ginger

3 cloves garlic, chopped

1 teaspoon chilli powder

½ teaspoon garam masala

½ teaspoon ground cinnamon

1 teaspoon cumin seeds

1 teaspoon coriander seeds

1 tablespoon tomato paste

¼ cup brown vinegar

1/3 cup oil

1 tablespoon oil, extra

2 large onions, sliced

1 medium green pepper, sliced

  

Shell and devein prawns, leaving heads and tails intact.  Place prawns in large bowl.  Blend or process ginger, garlic, chilli powder, garam masala, cinnamon, seeds and paste until smooth. 

 

With motor operation, pour in vinegar and oil in a thin stream.   Pour mixture over prawns; mix well.  Cover, refrigerate several hours or overnight, stirring occasionally. 

 

Heat extra oil in large frying pan, stir in onions and pepper, stir over medium heat for about 3 minutes (or microwave on HIGH for about 4 minutes) or until onions are soft.  Stir in prawn mixture, stir over high heat for about 3 minutes (or microwave on HIGH for about 3 minutes) or until prawns are tender.
