Marathi Salmon CurryHow to Make Marathi Salmon Curry

2 tbsp ground nut or vegetable oil

3-4 garlic cloves,slightly crushed

9 0z skinned and boned salmon steaks

1 tbsp rice flour or all purpose flour

1tsp hot powder

1/2 tsp turmeric

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp tamarind concentrate

7/8 cup coconut milk

 

Method:

 

* Heat the oil in a  pan and add garlic and fish

 

* Fry each side of the steaks over a low heat for 4-5 minutes until lightly brown

 

* In a bowl ,mix together all the other ingredients, except the coconut milk,with 2/3 cup cold water
Add to the pan and simmer for 3 minutes.

 

* Mix the coconut milk with 3/8 cup boiling water and add to the pan

 

* Cover and simmer for 7 minutes , the sauce should be runny and serve when when hot
