Mangalorean ChickenHow to Make Mangalorean Chicken

5 tbsp vegetable oil

5 tbsp plain yogurt

2 tsp coarsely ground black pepper

3 garlic cloves , crushed

2 tsp ground cumin

1/2 tsp ground cinnamon

1/2 tsp salt

1 tsp lemon  juice

1 2/8 lb boneless chicken breast cut in to 2 1/2 -inch cubes

1 1/2 medium onion , finely chopped

1/2 tsp turmeric

Method:

 

1.In a bowl ,mix together 1 tbsp of the oil , yogurt,black pepper , garlic,ginger ,cumin, cinnamon,

salt and lemon juice.

 

2.Add the chicken and cover and refrigerate for 30 minutes to marinate

 

3.Heat the remaining oil in a heavy based pan.Add the onion and turmeric  and gently fry

for 5 minutes to soften the    onion
 

4.Add the chicken piece with any marinade and fry over a medium heat for 5 minutes until the

chicken is  golden brown all over.Add 1/2 cup boiling water and simmer for  10 minutes  or

until the chicken is thoroughly cooked

 

5.Add more water if you want more sauce . Top with generous grinding of black pepper

Serve when hot
