Maharashtrian MasalaHow to Make Maharashtrian Masala

1 tbsp coriander

1 tsp fennel seeds

1 tsp poppy seeds

1 tsp black caraway seeds or black cumin seeds

1 1/2  inch cinnamon stick

6 cloves

10 black peppercorns

1 tsp ground mace

8 green cardamoms,seeds only

5 black cardamoms,seeds only

10 dried medium red chili, stalk removed

1 tsp turmeric

generous pinch of asafetida

 

Method

Heat a frying pan  and roast all the ingredients , except the turmeric and asafetida, for 2 minutes

 

Place the turmeric ,asafetida ,and roasted spices in a blender

 

Blitz to a fine powder

 

Store the mixture in an airtight container in a cool  place for up to 8 months.
