How To Make Madras Potato Poriyal
4 cups peeled and cubes potatoes
1 tsp turmeric powder
3 tbsp olive oils
4 Small cinnamon stick
2 Bay leaf
1 1/2 mustard seeds
2 tspn urad dal
3/4 Cup onion ,cut into lengthwise
1/2 Cup chopped tomatoes
1/2 tsp cayenne powder
1/ Cup tomato sauce
1/4 Cup chopped fresh coriander
Salt to taste
1 . In deep saucepan cook cubed potatoes with 1 1/2 cups of water and 1/4 tsp turmeric powder.
when potatoes are half boiled remove from the heat and set a side with water
2 . Put olive oil in separate saucepan and heat and add cinnamon stick, Bay leaf, mustard seeds, and
urad dal. Fry until mustard seeds pop and urad dal turns golden
3 . Add onions and tomatoes and fry for a few minutes.
4. Add remaining turmeric powder cayenne powder, cumin powder, and tomato sauce and fry well
5 . Add potatoes and gently stir into mixture in skillet.
6 . Add salt and cook, covered over medium heat until potatoes absorb tomatoes sauce and become
through cooked. Add 2 tbsp water if the potatoes need to cook more and the mixture becomes
