FOR THE KOFTAS;

1/2 Lb minced lamb

2 medium onions, chopped

1 tbsp minced ginger

1 tbsp minced garlic

1/2 tsp chili powder

1 tsp ground coriander

1 tbsp chopped fresh cilantro

1 egg, beaten

salt to taste

FOR THE SAUCE;

3 tbsp tomato paste

2 tbsp plain yogurt

1 tbsp coconut oil

1 tsp cumin seeds

2 bay leaf

1 tbsp minced garlic

2 tbsp minced ginger

1/2 tsp ground turmeric

1/2 tsp chili powder

Salt to taste

1//2 tsp garam masala

 

Method:

1. To make the koftas, placed the minced lamb in a blender and process for about 1 minute. Remove

and set aside in a large bowl.

 

2. Place the onions, garlic,ginger,chili powder,ground coriander and half of the chopped fresh cilantro in

the food processor and blend together for about 1 minute. Combine with the minced lamb. Add the

egg, season and set aside for 1 hour

 

3. For the sauce, whisk together the tomato paste and yogurt. Set aside. Heat the oil in a pan and when

hot, add the cumin seeds and bay leaf.

 

4. When the seeds begin to crackle add the ginger and garlic. Cook for a minute. Add the turmeric and

chili powder and then the yogurt mixture. Add salt and cook for a further 2 minutes.

 

5. Take a small balls of mince mixture and shape into small koftas ( round balls shape) using well greased

hands. Return the sauce to high heat and add the koftas. Cover and cook for about 15 minutes, stirring

occasionally.

 

6. Sprinkle with the garam masala and remaining chopped cilantro. Serve hot
