Kerala Dry -Fry Chicken Kerala _ Dry Roast Chicken

Chicken – 1kg cut into medium size pieces

Onion – 4 big

Kashmir Chilli Powder – 2 tsp

Red Chilli powder – 2 tsp

Green Chilli – 5

Turmeric powder – 1 tsp

Coriander powder – 3 tsp

Pepper powder – 1 tsp

Garam masala – 2 tsp

Ginger garlic paste – 5tsp

Curry leaves – 15

Tomato – 2

Oil – 7

Salt to taste

For Marinate:

Chilli powder – 2 tsp

Kashmir chilli powder – 2 tsp

Turmeric powder –1  tsp

Ginger garlic paste – 3 tsp

Lemon juice – 3 tsp

Salt to taste

Method:

 

1 . All the marinate ingredients mix Together. To make a paste add bit water to mixture

2 . Wash well chicken and  mix with marinate then  keep it in the fridge for  30 -45 minutes.

3 . In the saucepan heat the oil  and roast the marinated chicken till its golden brown in color and

remove from the pan

4 . In same pan add  onions and curry leaves,  Fry onion till golden brown .

 

5 . Add ginger garlic paste, green chilli and fry  for a 2-3 minutes.

6 . Add  coriander, Kashmir chilli, red chilli, , turmeric, pepper,  garam masala, salt and fry  about

3 minutes.

7 . Add roasted chicken and mix well ._  If you want the curry as dry , cook with the pan covered about

4-5 minutes  and remove from the heat.
8 . If you want the curry with little gravy and like the taste of tomato follow the steps of below

9 .  Add 1/2 cup water and put sliced tomato and cook for  5 min until tomatoes are tender.
