1 Lb Skinless chicken breasts cut into bite size

5 Tbsp coconut oil

1 Medium onion sliced

5 Green chiles finely chopped

1 Tsp grated ginger

4 Crushed garlic cloves

1/2 Tsp hot chili powder

1 Tsp ground coriander

1/2 Tsp turmeric

2 Medium tomatoes roughly chopped

2 Medium white potatoes peeled and cut in to bite size

1 1/2 Cup coconut milk

10 Curry leaves

Pinch of garam masala

Salt to taste

Shallots

 

Method:
1.    In a pan heat  4 tbsp oil  and add onion fry for a 2 minutes and add chiles,stir in the ginger,garlic

chilli powder,coriander.turmeric,and salt. cook for more 2 minutes

2.    Add the Chicken  and fry on low -to medium heat for 8-10 minutes.

3.    Tip in the tomatoes and potatoes and cook for 3 minutes.

4.    Pour 1/2 3/8 cup of the  coconut milk and simmer for 10 minutes until potatoes are tender and

the chicken is cooked

5.   In a separate pan heat the remaining oil and add the curry leaves  and  shallots fry for 3/4 minutes

till golden brown

6.   Sprinkle the garam masala over the stew and  stew and swirl in an extra 2 tbsp coconut milk.
Serve hot garnished with the fried shallots and curry leaves
