Kailrali Eggplants

How to Make Kairali Spiced Eggplant

4 medium eggplants, thinly sliced

12 dry red chilies

1 tbsp peppercorns

5 garlic cloves

2 tbsp vinegar 

3sprigs fresh curry leaves

1tsp turmeric powder

Oil for to fry

Salt to taste

 

Method:

 

1. Mix the eggplant slices with salt and turmeric and  rinse well.

 

2.  Blend all  the chilies, garlic cloves, vinegar ,peppercone and curry leaves to a fine paste.  

 

3. Put in the large bowl and mix with the eggplant slices to coat both sides with this mixture. 

   marinate about 30-40 minutes.

 

4.Heat oil in a  frying pan over medium-low heat. Place the marinated eggplants  in a single layer

  and fry for 5-6 minutes to start to crisp and light browned .Turn over the other side and repeat
