Japanese Tempura

 

 

1 doz. Tiger prawns (shell but leave tails on).  Slit on underside and spread out two halves and it will give you an attractive fan shape.  Marinate prawns in lemon juice, chilli, salt and pepper for 1 hour.  Pieces of cauliflower, green peppers, slices of brinjals etc.

 

The Batter

 

1 egg

½ cup water

¾ cup flour

Salt

 

Beat eggs lightly.  Gradually add water and continue to beat.  Gradually add flour and salt with wire whip.  Set aside for half an hour before frying.  Serve hot.
