| Mixed Fish Curry |

3 tbsp butter 3 garlic cloves, chopped 2 shallots, chopped 1 small red chilli, seeded and chopped 4 tbsp grated coconut Pinch of cayenne pepper 1 tsp mild curry powder ½ tsp garam masala 1½ cups water 12 oz/350g cod fillets 12 oz/350 g haddock fillets 1 tbsp orange juice 1 tbsp chopped fresh cilantro 1 tbsp chopped fresh cilantro 1 tbsp chopped fresh parsley Salt and pepper Garnish Fresh cilantro, chopped Slices of orange To Serve Freshly boiled rice Melt the butter in a large skillet over low heat. Add the garlic and shallots and cook, stirring, for about 3 minutes, until slightly softened. Add the chilli, grated coconut, cayenne pepper, curry powder, and garam masala, and cook for another 2 minutes. Stir in the water and bring to a boil, then lower the heat and simmer for 7-8 minutes. Rinse the fish under cold running water, and then pat dry with paper towels. Add the fish to the pan with the orange juice and herbs, and season with salt and pepper. Simmer for another 7-8 minutes, until the fish is cooked through. Arrange the freshly boiled rice on serving plates, then spoon over the curry, dividing the fish fillets evenly between the plates. Garnish with chopped fresh cilantro and slices of orange.
