12 sardines, scaled and gutted         2 tbsp white wine vinegar

1 tbsp olive oil                                 4 tbsp chopped fresh cilantro

                                                      Pepper

 

Dressing                                        Garnish

 

1 garlic clove, finely chopped            Slices of fresh lemon

3 scallions, trimmed and sliced        springs of fresh cilantro

½ cup extra-virgin olive oil

4 tbsp lemon juice

 

 

Broiled Sardines with lemon & Cilantro Recipe

 

 

 

Preheat the broiler to medium.  Rinse the fish inside and out under cold running water.  Drain, and then pat dry with paper towels. 

 

To make the dressing, put the garlic, scallions, olive oil, lemon juice, vinegar, and cilantro into a small bowl and mix together well.  Season with plenty of pepper and set aside. 

 

Line a broiler pan with aluminum foil, then brush the foil with a little olive oil.  Arrange the sardines on the top of the sardines and cook under the preheated broiler for about 3 minutes, or until cooked through. 

 

Remove from the broiler, transfer onto individual serving plates, and garnish with lemon slices and cilantro springs
