Oatmeal and Cereal Cookies

  • ¾ cup (11/2 sticks) butter or margarine, at room temperature
  • ¾ cup sugar
  • 1 egg yolk
  • 1 ½ cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup rolled oats
  • ½ cup small crunchy nugget cereal

Preheat the oven to 400 oF.  Lightly grease 2 cookie sheets.  Spread the oats and coconut on an ungreased baking sheet.  Bake until golden brown, 8-10 minutes, stirring occasionally.   

With an electric mixer, cream the butter or margarine and sugar together until light and fluffy.  Mix in the egg yolk. Sift over the flour, baking soda, and salt, then stir into the butter mixture.  Add the oats and ceral and stir to blend
