Crunchy Jumbles 
  • ½ cup (1 stick) butter or margarine, at room temperature
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 11/4 cups flour
  • ½ teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 cups crisped rice cereal
  • 1 cup chocolate chips

Preheat the oven to 350 oF.  Lightly grease 2 cookie sheets.  With an electric mixer, cream the butter or margarine and sugar until light and fluffey.   Beat in the egg and vanilla.  Sift over the flour, baking soda, and salt and fold in.  

Add the cereal and chocolate chips.  Stir to mix thoroughly.  Drop the dough by spoonfuls 1-2 inches apart on the sheets.  Bake until golden, 10-12 minutes.  Transfer to a rack to cool.
