Vegetable Fritters With Yogurt dip ¾ cup besan flour ¾ cup self-raising flour 2 cloves garlic, crushed 11/2 teaspoons garam masala 1 teaspoon chilli poser 1teaspoon cumin seeds 1 tablespoon chopped fresh coriander 1 cup water 1 medium potato, finely chopped 1 small eggplant, finely chopped 1 medium zucchini, finely chopped 250g cauliflower, finely chopped Oil for deep-frying Yogurt Dip 1 teaspoon cumin seeds 1 cup plain yogurt 1 small fresh red chilli, chopped ½ teaspoons paprika 2 tablespoon chopped fresh coriander Sift flours into large bowl. Stir in garlic, garam masala, chilli powder, seeds and coriander. Make well in centre, gradually stir in water, mix to a batter; stir in vegetables. Deep-fry heaped tablespoons of vegetable mixture in batches in hot oil until golden brown; drain on absorbent paper. Serve hot with dip. Yogurt Dip: Place seeds in small frying pan, stir over medium heat for about 2 minutes or until fragrant, remove from heat; cool. Combine seed with remaining ingredients in small bowl; mix well.
