| Broiled Halibut With Garlic Butter |

4 halibut fillets, about 6 oz/175 g each 6 tbsp butter, plus extra for greasing Salt and pepper 2 garlic cloves, finely chopped
Garnish Springs of fresh parsley Thin strips of orange zest To Serve Crisp salad greens Cherry tomatoes cut into slices Preheat the broiler to medium. Rinse the fish fillets under cold running water; them pat dry with paper towels. Grease a shallow, heatproof dish with butter, them arrange the fish in it. Season with salt and pepper. In a separate bowl, mix together the remaining butter with the garlic. Arrange pieces of the garlic butter all over the fish, then transfer to the broiler. Cook for 7-8 minutes, turning once, until the fish is cooked through.
Remove the dish from the broiler. Using a spatula, remove the fillets from the dish and arrange on individual serving plates. Pour over the remaining melted butter from the dish, and garnish with springs of fresh parsley and strips of orange zest. Serve with crisp salad greens and cherry tomato slices. Fish&Seafood
