Makes 18

 

½ cup (1 stick) butter or margarine, at room temperature

½ cup light brown sugar, firmly packed

1/3 cup crunchy peanut butter

1 egg

½ cup flour

½ teaspoon baking powder

½ teaspoon cinnamon

1/8 teaspoon salt

2 cups granola cereal

1/3 cup raisins

½ cup walnuts, chopped

 

Preheat oven to 350oF.  Grease a cookie sheet.  With an electric mixer, cream the butter or margarine and sugar until light and fluffy.  Beat in the peanut butter.  Beat in the egg. 

 

Sift the flour, baking powder, cinnamon, and salt over the peanut butter mixture and stir to blend.  Stir in the granola, raisins, and walnuts.  Taste the mixture to see if the needs more sugar, as granolas vary. 

 

Drop rounded tablespoonfuls of the butter onto the prepared cookie sheet about 1 inch apart.  Press gently with the back of a spoon to spread each mound into a circle.

 

Bake until lightly colored, about 15 minutes.  With a metal spatula, transfer to a rack to cool.  Store in an airtight container.
