2 cups sugar 1- ½ cups salad oil 3 eggs 1 teaspoon vanilla 3 cups flour 1 teaspoon soda ½ teaspoon salt 1 teaspoon cinnamon 1 cup crushed pineapple 2 cups raw carrots, finely grated 1 cup nuts, chopped Mix together sugar, salad oil, eggs, and vanilla. Add combined flour, soda, salt, and cinnamon. Mix well. Add pineapple, grated carrots, and nutes, mixing well. Place into a 13 x 9- inch pan and bake in a 350 degree oven for 1 hour and 15 minutes or until tested done. Frost with a cream cheese icing. Note: Use as a dessert, snack, or coffee cake.
