Shrimp Puffers Makes 60 appetizers 8 tablespoons softened butter or margarine 2 eggs, separated 3 cups shredded sharp cheddar cheese 15 slices white bread (thin – sliced) 60 cooked shrimp, shelled and deveined Blend butter cheese and egg yolk until smooth. Beat egg whites until stiff; fold into cheese mixture. Trim crusts from thinly sliced bread; cut each piece in quarters diagonally. Top each slice with a shrimp and 1 teaspoon of the cheese mixture. Bake in a preheated 350 degree oven on lightly greased cookie sheets for about 15 minutes, or until puffy and golden.
