Makes about 25 puffs.

 

½ cup water

¼ cup (1/2 stick) butter

½ cup flour

2 eggs

 

Heat water and butter to boiling; reduce heat and stir in flour all a once.  Stir about 1 minute until mixture forms ball around spoon.  Remove from heat and beat in eggs, once at a time, until mixture is smooth. 

 

Place by rounded teaspoonfuls onto ungreased cookie sheets.  Bake in the preheated 400 degree oven for about 25 minutes or until golden.  Remove and cook on racks

 

Slice off tops; remove any doughy insides.  Fill with any sandwich filling; chill until serving time.   Blanche Towner
