Green Peas in Green Pea Curry Sauce
3 ½ cups green peas, shelled
½ tsp baking powder
½ cup ghee
5/8 cup or 150ml water (I)
5/8 cup 150ml water (II)
Singe-fry masala (Liquidized)
4 Green chillies
1 cup green coriander leaves only
8-9 garlic cloves
1 tsp turmeric powder
2 tsps salt, to taste
1 tbsp cumin, powdered, roasted
Take one third of the shelled green peas, boil with water I and baking powder; liquidized and keep aside. Baking powder maintains the green colour and adds to the softening of the raw peas.
In a deep cooking pan bring ghee to high heat, add the liquidized singe fry masala and stir fry till oil appears on top. Now add the remaining shelled green peas and stir fry till well coated with the masala for 2-3 minutes. Add water (II) and simmer on medium heat for 15-20 minutes till the peas are done. Add the liquidized peas. Transfer to a baking dish. Sprinkle the garnish masala and serve with steaming boiled rice.
