Green Duck Curry

Serves 4

 

400mL can coconut cream

2 tablespoons green masala paste

No. 20 duck

400mL can coconut milk

1 cup water

8 dried lime leaves

1 tablespoon sugar

1 tablespoon dried basil leaves

3 small fresh red chillies, seeded

3 small fresh green chillies, seeded

  

Combine coconut cream and paste in large saucepan.  Bring to boil, reduce heat, simmer, uncovered, for about 10 minutes or until mixture is reduced by a third. 

 

Cut duck into 8 pieces.  Add duck to saucepan.  Bring to boil, reduce heat, simmer, uncovered, for 15 minutes, stirring occasionally.

 

Stir in coconut milk, water and lime leaves.  Bring to boil, reduce heat, simmer, uncovered, for about 40 minutes or until duck is tender.
