3 cups fresh coriander leaves
1 tbsp chopped green chilli
2 tbsp lemon juice
¼ tsp sea salt
½ tsp gourd roasted cumin seeds
1 pinch ground black pepper
Place all the ingredients in a food processor and puree. Periodically open the lid of the food processor and, using a spatula, scrape the coriander from the sides of the container to the bottom.
Repeat until a smooth paste is obtained. Store in an airtight non-metal container in the refrigerator. Will keep for 4 to 5 days. Serve as a condiment.
