225g/8oz cleaned sprats ¼ tsp turmeric 1 tsp chilli powder 1 tsp salt Oil for deep-frying Lemon Juice Rub the sprats well with turmeric, chilli powder and salt. Gently heat the oil and fry the fish for 6-8 minutes, a few at a time, until crisp. Drain on absorbent kitchen paper, then sprinkle with lemon juice and serve.
