2 tbsp olive oil

2 bay leaves

7 whole cardamom pods

2 inch cinnamon stick

3 whole cloves

1 cup finely chopped onions

1 tbsp minced fresh ginger

1 tsp chopped green chili

1/4 turmeric

salt to taste

1 cup Basmathi or fine long grain white rice

1 1/4 cup water

1/2 cup fresh coconut milk

1/4 fresh of frozen shrimp



1. Heat oil in a large,deep -side pan over medium low heat. Fry bay leaf ,cardamom, cinnamon, and

cloves for a few seconds. Add onions and fry until get browned


2. Add ginger,turmeric, green chili and salt and rice ,then cook about 5 minutes, stirring constantly.

Add water and bring to boil. Lower the heat slightly and simmer,covered until all the water is

absorbed and rice is tender about 10- 15 minutes. Pour coconut milk on top of the rice but do

not stir.


3. Simmer ,covered,another 5 minutes. Arrange shrimp on top of rice . Simmer ,covered,until

shrimp is done,4 -5 minutes.  Remove from the heat .Let stand cover for a few minutes  to

allow the rice to become plumper and fluffier. Add chopped cilantro and stir gently and serve

when hot
